I would rather have an ignition switch that uses a key. If nothing else, some type of safety interlock. My 2015 with a manual transmission starts with just a push of the button. In gear, no foot on the brake or clutch, just push the button, it starts.
It's not supposed to do that. You might want to visit your dealer's service department.
New start button looks cheap and out of place compared to the old one IMO. The piano black surround and silver button does not match or compliment any part of the rest of the dash layout.

Doesn't sound like yours is working correctly. It's not supposed to start unless you have the clutch pedal depressed. There is a "Clutch position sensor" to prevent starts while the gear is engaged. I should even require you to press the clutch pedal even if the car is in neutral.
OP, having swapped my 2014 dash to the carbon fiber one I can tell you it is a lot of work to get to that button. I'm debating doing it again on my 2015. If you are going to replace it, I'd say do it all at once. I personally think the painted ones from RPI look better than the new OEM one for 2016. Plus then you can have a red one like you had.

That is actually impossible. You would not be able to start a manual transmission car while it is sitting still, in gear, without the clutch depressed.

It is a 7 speed manual transmission. It will start, without depressing the clutch, in gear or in neutral.
I think I'd get real tired, real fast, of having to flip up that stupid cover every time I drove my car. Maybe if your 'vette is a garage queen that only gets driven 20 times a year, but mine is started multiple time almost every day.
