Well I am about ready to part ways with my 2014 Z51 vert, going to order me a 2016 coupe. I have a few question for those that have this option. Is the Video data recorder worth the $1795.00 price? Do you use it much, if so how do you like it?

For $1795 you are getting more than the PDR, you also get the navigation unit. The PDR is fun to play with, the nav is good . It's your money.
If you like driving any road that has a curve in it (like me), worth having. (and like others have mentioned, gives you the GPS Mapping interface too). It's a "fun" factor.
It's expensive but I'm happy with it and I would order it again. I used the PDR today for the first time in performance timing mode to see what kind of 0-60 time I could get. It was a hoot!
Personal Choice. It is bundled with the Nav. Some like the nav/GPS and some don't. I like the GPS and the PDR.
If all you do is drive around your local area you probably don't need either.
If you take road trips and program destinations and points of interest into your NAV & like to record some of your travels then these options are something that may be of value.
All of this can be accomplished with after market equipment and may be as good or better. The factory options offer a more integrated package.
And there is the Valet feature that will show you how someone abused your car while gently parking it.
I think it is too expensive but I still prefer to have it. If I used my Corvette as a 'around town, grocery grabber' I would not have it.
I also would not have the Z51 package.

Totally agree;Fun factor for sure!! Also, you may not want to add after market dash cams etc. to your car to keep car "clean looking". PDR is valuable also for its recording of what goes on in front of you (in case someone pulls into your lane without signals) Could be helpful to have a record in case of an accident. We turn our PDR on every time we go somewhere. Just don't forget to delete recordings you no longer want to keep enough space on SD card.
Heidi SAVE THE WAVE
Today my wife and I are going to visit family for Thanksgiving and I am taking the vette. I will have the PDR going without the wife knowing and tape the conversation and play it back to my wife on the way home if that is possible. I think you can play it back while driving but now sure.

If the car is moving, it blocks the playback function.
Truthfully, I was really eager to have it as an option, but I really don't use it much. In fact, i bought the option just for the PDR and didn't care about navigation, now it seems that I use navigation way more. The PDR only gets activated if someone is challenging me to a spirited highway sprint or if there's a nice sunset. It would be a lot better if it acted as a DVR and recorded at all times instead of manually activating.
I must say that the cosworth software is really nice and that the PDR is very well integrated into the system, you just can't get the type of analytics with an aftermarket dashcam.
Where I live, doesn't take long to get out of town and find miles and miles of fun roads. I like the PDR's integration. Lot less trouble than hooking up my GoPro, which was also quirky to operate.
I wanted NAV, and occasionally use a GoPro, so the PDR made sense for me. Personal decision if you want to spend the bucks.
