The reason for turning on the heater on is the cooler coolant in the heater core and hoses mixes in with the overheated coolant cooling it down. In other words turning the heater on introduces more coolant into the system.

Makes no difference if you turn the heater blower on high or low. Just turning the heater on introduces the water into the coolant system.

This is why your heater air in the cabin does not warm up until the engine reaches normal operating temperature. The coolant in the engine circulates through the heater core and hoses and this is what the blower uses to introduce warm/hot air into the cabin to warm you up. The blower blows air through the heater core, through your vents into the cabin.
WRONG!
Heaters have been full flow since 1963.

Fast forward 24 hours and they said everything looks fine. Checked all the lines, fluids etc. and said everything came back fine. Weren't any codes left when overheated either.

He asked me if a service tech could take it home with him tonight (service tech lives about 25 miles away) to try and recreate the situation that it overheated on the highway. I said absolutely not and laughed. Did he really think I was going to say yes?

Sorry I don't have any answers to report, that's all I've got for now. If it checks out with them, I'm fine with it. It'll be for sale in the next month anyways, I'm done with it.

I have had same issue. I have a 2014 Z51 and was coming home from the Bash at the museum on Sunday. Made two stops for gas and lunch. Got 3 miles from my exit and hit construction traffic, stop and go, turned off A/C to try and assist cooling by running heater, no help. Pulled over to parking lot, was starting to lose oil pressure, cut off car, opened the hood, fan not running. Tried to restart, acted like a low battery, difficult to turn over. Let the car sit for a while, engine started with a check engine light. Fan still did not come on until I turned on A/C again. Car drove home ok.

Next morning, on Monday, I drive car to dealer, no check engine light. Dealer calls me today for more info because.............you guessed it, failure to replicate.

Has happened to me at least two other times. Once I had a Master GM Tech connect a device to the car and sent command to the fan to run at 100% and fan responded, so we know that the does run when commanded, Just have to find out why the car is not telling the fan to run.
