I have had my C7 (M7) about a month and cannot figure how to get the doors to lock/unlock like I want them to. I now have the car not locking automatically when I get out, I don't mind having to push the button. When the car is in the garage, it does not need to be locked. I want it to lock automatically when I start to drive and unlock when I stop and park. Now, when I stop, it does not unlock and I have to push the unlock button to get out. When I push the lock button (on the door) as I exit or after exiting, it locks and then immediately unlocks, like the fob is in the car. I have to lock using the remote.
Let me try to help. Look at the Infotainment Home screen and drill down in the following fashion: Tap Settings, Chose Vehicle, and then Power Door Locks. Once there you will see all the options to adjust, and turn off and on and set your preferences.

I have not found a way to make the car unlock when you turn the ignition off. I also have to hit the unlock button every time.. Also, I noticed I can set the passenger door not to automatically unlock when I walk up to the car, but cannot turn off auto unlock for driver door?
I wanted to check if the driver door was really locking, and I had to leave the fob in the house out of range to check.

In an M7 you need to do nothing but turn the car off. IOW if you've turned off the engine you can open the door. Hell I think you could be rolling down a hill, turn off the ignition and you could open the door but needless to say I have not tried that...

Not on my M7.. I shut the ignition off, and all the doors stay locked.

There is a button on the dash far left side down low. When you turn off the ignition push this button within a few seconds and your doors will not lock on you. I found it by accident as I had not clue what this button was for. There are two buttons there I think it is the right button. Give a try. You might have to close the door with the window down and then push the button... can't remember.

I think the button you are talking about is next to the hatch release, and it turns the motion sensor off.
