My wife an I did a 14 day 5,000 mile Xcountry trip in our vert. She even had her laptop on her lap doing conference calls using a "hot spot" the whole time. I had wash supplies along with my computer too.

FedEx.
That is what we do. Take bare minimum to get from home to our destination. FexEx the rest.
When we go home, same thing, FedEx it all home.
Trip to Vegas and back cost us about $150 in shipping but traveled with the top off whenever it was over 60 degree's.
Get musician ear plugs, work great for high speed with the top down/off. I imagine a convertible is probably quieter with the top down than a coupe, get buffeting in the coupe.

And you're right, there's nothing like taking a luxury condo along with you. There's no packing involved because our clothes, and everything we need except food is always left on-board.

Sorry, I don't see the beach umbrella, beach towels, beach chairs, the 2 - 1.75 liters of liquor (whisky & vodka), 2 liters of chaser (1 ginger ale & 1 Cranberry Juice). Oh yea, the giant bottle of all our meds. That’s why I have a coupe. I need the important stuff. When I arrive at my destination, I don’t want to leave until the next day. Pizza delivery comes in handy the first night. But Verts are cool.

At 42K GVW, and 13' ft. tall, you have to be careful with regard to route planning. But, the big rig stays on big roads, and the Jeep we flat-tow gets us everywhere else we want to go.

That is not true. I can load everything you have pictured and more in my coupe and still fit the top back there. My son and I travel for baseball and I have fit basically what you have pictured plus his baseball bag and two small coolers. It's amazing how much storage room there is in a coupe with the top off , plus I am able to fit items behind the seats.

Excellent question Allow me to explain
For harsh sun, rain, or ugly commutes, top goes up.
Snug, quiet, and comfortable as a Caddy.
For warm evenings, mild days, or scenic drives, top goes down.
Wide open views and fresh air on the skin. Heaven.
Best of both worlds, at the touch of a button.
Nothing beats a Corvette convertible.

It is possible to pack for two for three weeks, and keep the top down the whole time (rain notwithstanding).
SOFT luggage will give you literally twice the clothes. DITCH THE ROLLER BAGS. Most of that space goes to frame. Duffles Rule the Road!
Don't be afraid to buy stuff and have it shipped rather than lug it with you.
This includes rugs. and wine.

Jeeps were cool when I was young. I've had three of them. Now days I prefer the Corvette or the Harley-Davidson.

i HAVE A SOLUTION TO THIS...
when I ordered my vert last December, I also ordered the Luggage set that comes as an option and all 5 pieces fit in the trunk; a little pricey of course but it works...with the top up of course!

Don't get me wrong, it's really cool luggage, just not space efficient.

You can't flat tow a Corvette, and dragging a trailer around, and storing it, etc., when you're traveling long-distances is a drag.
