I have a 2015 coupe, DSOM (G1H), A8 (M5U), Kalahari leather (345) 3LT interior, standard wheels. I have the information on how many cars were coupes, DSOM, A8, Kalahari, and 3LT. I can calculate statistically that there were about 11 cars produced with the options on my car, but is there any way to determine exactly how many cars were produced with these options?

Not exactly, but you can see how many of each option, but not how many cars that are equipped with an entire package of options. That list would be 100's of pages long, and I'm sure it exists in computer records somewhere that haven't been published. It would require a special data search.

Information to that level of detail is not publically available. Using "statistics" does not really give a very accurate picture as that method assumes that individual options have no correlation to other options. However, that is not true. For example, it is likely that "standard wheels" are taken at a lower rate on a 3LT than on other trim levels. Certain interior colors are far more common with certain exterior colors.
I agree it's not publicly available, but I have no doubts that the data you're looking for exists somewhere. However, I don't know how you'd get it unless you know a GM insider. I'm sure it's possible for someone w/ access to GM databases to tap into a searchable database, select the exact configuration of any given car and come up with an exact number built the same way by VIN.
If you've ever watched a Barrett-Jackson or Mecum auction, you've no doubt seen a numbers-matching, beautifully OEM restored, Corvette or Camaro, with a very desirable equipment package. The commentary often follows with something like, "this is one of only 90 built in this exterior color, interior, options, and drivetrain package." Clearly those data exist.
However, I don't think it's worth anything on contemporary models. Check back in 40 years.

I have tried to figure the same thing.
I have a 2015 DSOM Z51 3LT with Brownstone, MSRC 8 Sp.
I also have a DSOM, but for 2016. I checked this out a couple of months ago and came up with the two most important stats. Exterior and Interior colors.

Point being when asked about my 2016 I just say that there were only 53 - 2016 coupes with this color combination.
Here is the production chart for the 2016 color combos. It shows that on Stingray Coupe/Convertible there were only 16 cars built in 2016 in Daytona Orange with Brownstone interior. There were 10 ZO6's built in that combo

In 2015 there were 210 Stingray Coupe/Convertibles built in Daytona Orange with Kalahari Interior and 123 ZO6's
Here is the production chart for the 2016 color combos. It shows that on Stingray Coupe/Convertible there were only 16 cars built in 2016 in Daytona Orange with Brownstone interior. There were 10 ZO6's built in that combo
That's GREAT NEWS for me. I was looking at the statistics that the Corvette Museum had and it showed Exterior Coupes DSOM for 2016 = 532 and Brownstone Leather = 53.
How can that be????

The Corvette Action Center has production numbers and specs for all Corvettes going back to 1953, but the problem is that GM didn't keep production numbers for option combinations. There's really no way to accurately calculate how many cars were built with your options.

The Corvette Engineers bring it to Corvettes@Carlisle every year. They had it on a table under their tent I take a photo of it every year. My Admiral Blue with Red interior was the only Stingray built in 2016 in that color combo.
The answer to my original question is: There were two 2015 Corvettes produced that have the same options as my car.
This number came from the Assembly plant via the Corvette Museum. Our local Corvette club has a Museum Ambassador and about 6 months ago I asked him if he knew someone at the Corvette Museum or Assembly Plant that could supply the answer to my request. He sent my question to the museum and someone named "Betty" replied and said she would send the request to the plant. A month later there was still no reply, so he emailed her again, still no reply. Every few weeks he would send Betty an email and finally I received an answer yesterday.
