I'm planning on purchasing a 2015 Z51 with rev matching and I'm looking into what it actually does
Welcome to the forum! There's a tab on the upper right labeled "search this forum". Type in what you're looking for and you'll see every thread with the key words you entered. Probably the fastest way to get the answers you're looking for.
If you have ever done heel/toe downshifting slowing for a corner that is what it does. You move the shift lever to the next lower gear and it blips the throttle to bring engine revs up to the level needed for that lower gear when the clutch is let out. It does it a lot better than you can since you do it by ear and it does it by knowing how fast the engine is rotating and what speed it needs to be rotating when the clutch is let out.
Just got my 7 speed Z51 on Sunday so not a lot of experience with rev match, but so far I love it. Maybe it's a gimmick, but the first thing I do when I start the car is put it in rev match. I wish there was some way to make it the default setting rather than have to select it each time you start up.

Totally agree with you. First thing I do after startup is turn on rev match and turn off automatic light control. Wish there was a way to set those two as the default.

You don't want that. The car should be up to temp before turning on rev match.
Interesting, since automatic transmission does NOT have Rev match capability
There seems to be a lot of controversy over this. A lot of people insisting it does. I have never heard of it on an auto myself. The tell would be if you get engine braking when down shifting. If the cars speed stays the same, there is a reverse match of sorts occurring.
When I downshift In my A8 from 3rd to 2nd in jerks forward. I assume I am downshifting at a. As RPM or speed? I heard this can damage the car car?. I love the sound because it pops and of course everyone hears me...

That would make sense if rev matching on the auto was not real. With rev matching the rpms increase but the car stays stable. No weight shift at all.
