Best to leave traction control on! I am not sure where you are located but the tires do not have good traction until they are very warm. 65 degree ambient temperature still results in tires that will slip easily since the compound used for these tires is appropriately called extreme summer performance. You also have a lot of torque down low with the LT1 and an automatic with an extremely low first gear plus the torque multiplication provided by the torque converter and this combination makes it very easy to break the tires loose.
In my 2014 Cadillac ATS with its 321 HP V6 I can treat the throttle like an on off switch going instantly to full throttle with nothing bad happening as long as the tires have decent traction. If I tried that same behavior in my 2016 Z06 I would be sitting in the corn field waiting for a tow truck. At low speed and particularly with tires that aren't up to full temperature you have to roll into the throttle.

Don, NCS5 and Ken are right on. For your sake, the sake of those around you, and for your car - please don't turn all the nannies off unless you're in a private place with no cars around. It's clear from your post that you probably don't have a lot of experience (yet) with a rear wheel drive performance car with a ton of torque. Even those with a lot of experience get themselves into trouble. Get used to the car first, begin to experiment, have fun, but ALWAYS err on the side of safety when you're on public roads. It only takes once to ruin your day, and someone innocent bystander too.

Agree with all the above. Keep the nannies turned ON when on the street. They do not reduce power unless you are already slipping.
The Stingray has more than enough power and a light enough weight to break the rear tires loose and get you sideways, even at 40+ MPH. And once it starts to let go, it goes QUICK.
Don't let your pride (or any of the idiots on the web) fool you into thinking "Bah! I'm a great driver and don't need the nannies!" Save those hero-style antics for the track where you have more runoff room and armco!
If you pay attention and control your power accordingly, you can feel when traction starts to lessen and the rear of the car starts to drift. Just a slight power reduction will correct drift without personel drama.
It sounds like you turned “traction control” off, but left “active handling” on. Active handling is designed to always point the car in the direction that you are steering it. So…if the car starts to fishtail, it should be automatically applying 1 or more wheel brakes as a correction.
In my old C6, I would turn TC off, but leave AH on…on a wet road…floor the throttle…and the wheels would spin, but the car would go straight. In my C7Z06, with ALL the nannies on, the car always seems to correct itself if it gets loose #YMMV
