Anyone have any experience tracking a non-Z51 manual? I read all the threads I could find on this, but they all referenced the automatic (which they said would overheat). Fortunately, I didn't hear anything about engine oil starvation on the C7 so far. I'm not planning on using the car as a regular track toy or trying to set track time records. It would just be very occasionally to practice lines and for some no speed limit fun.

If that's all you're doing than you'll have a blast. I used to do HDPE's with a guy who had a non-Z51 manual, and he had no problems at all with oil starvation. I've taken many regular street cars to the track and not had any problems (other than going slower than I'd like).
As long as you're not going a long, sustained high G turn, you'll be fine.
Now if you want to get faster and getting more serious, then you'll probably want to step up in class.
Thanks for the input. Based on this, I would expect that Chevy put a different wet sump on the Camaros so they hold up at the track on long sweepers. Maybe the engine sits higher, and the sump is deeper.
Tracked mine once last summer. No problem with overhearing unless you forget to take the aeroplate off. No oil starvation that I know of. If I was doing it all the time I'd hedge my bet with a Z51 and the dry sump, but I think occasional tracking is fine with the wet sump.

The other thing I was gonna add was one of the turns was the part of the track oval, so probably at least 5 seconds of non stop 1.0+ G. Engine seemed perfectly happy doing it.
