Default Apple CarPlay issues
I have a 2016 Z51 Vert. When I purchased it last June, Apple CarPlay worked fine. When I brought it out of storage for this summer, it either doesn't work or Pandora will play one song and then quits. CarPlay in my 2017 Colorado and Honda CRV works fine with no issues.
Any suggestions as to what maybe the issue ?

Have you thought about checking to see if you can update the apps?

How about asked questions on the appropriate iForum?
