I'm trying to learn all of the functionality of my new 2017 coupe.
Rather than letting a brand new car sit in my driveway idling, is there a way I can turn on the accessory system so I have access to all functions from the touch screen?

From the Owners Manual:

Service Only Mode
This power mode is available for
service and diagnostics, and to
verify the proper operation of the
malfunction indicator lamp as may
be required for emission inspection
purposes. With the vehicle off, and
the brake pedal not applied,
pressing and holding the button for
more than five seconds will place
the vehicle in Service Only Mode.
Some options are only available with the engine running.

And make sure to press the Start button to turn off Service Only Mode when you're through.
