Yesterday I started it up and no dash functions. Nothing other than the infotainment / navigation panel worked. Tried everything and nothing brought it back to life.
Last night, just for fun, I disconnected the battery then reconnected it and now everything works fine. Any reason to be concerned?

Mine was in and out for this 3-4 times till GM sent a patch cable to do bypass so to speak has been flawless since.
The OEM battery in my '15 lasted a bit over two years even though it was on the trickle charger all the time. These car's computers are really sensitive to a weak battery. All kinds of weird things can happen with a weak battery. You can have it tested or just replace the battery. Many threads here on the subject, with installation instructions. The AGM battery seems to be popular, and they seem to be carried by all the major auto parts chains and they fit EXACTLY, except the one I got had handles. You might want to get the tool to remove the old one that has no handles.
Is your battery connected to a maintainer when not driven. If not your battery could be the problem, I would have it load tested before replacing.
I wouldn't be concerned, might have been just a computer glitch. If it happens again, have your battery tested. If you still have a 3/36 warranty and it happened again, I would go to the dealer and let him check your battery. If they find it's not your battery, hopefully it will be covered under your 3/36 warranty. Just another reason I got an extended warranty to cover the electronics.
Mine went out ('17 Z51 very). It stayed out for a few days then popped back on. I had the dealer take a look, they found a short, replaced it under warranty. It's not just a fluke, it's a problem.
I've owned my car for just over a year and there have been a number of these types of problems with the car. Little things that come and go. Each time something went wrong I've had the dealer look at it; sometimes they found a stored code, other times not, but I've not ever found that something was just a one-time fluke... certainly not the dashboard.
Yeah, a hard reboot; first thing to try on any computer... from waaaay back when.
As others have said, keep your battery fresh first and foremost. That said, the LED driver information center and infotainment center behave more like desktop computers than just gauges and stereos in the cars of yore. This sort of thing happens in every car I have with the screens everywhere. It hasn't happened on my Corvette yet, but it has happened on my Silverado and my wife's Pilot. Before determining that there is a "hardware" issue (bad wiring, bad component) shut the car off and start it back up. If that doesn't work, disconnecting the battery and reconnecting works too. The vast majority of "computer" issues are correcting by simply restarting the system.
I’m not surprised you broke trim clips removing the panels to access the battery. I had to remove the battery on my 24 and the panels definitely won’t hold up to multiple battery replacements over the years. Too many clips to pop free with a trim removal tool.
