What does reindexing the windows involve? What is the procedure? Or, does the C7 do it automatically upon opening doors after battery change out?

Shut the doors, raised the windows, and hold up the window switch for three seconds.
Have you ever actually even perused the Owners Manual? It's obvious you have never read it, but holy crap, with all of your pontificating about the brand, you should have at least skimmed it!
OK, evidently, even I have a breaking point. *pulls hair out emoji *

Because it's more trouble to connect the maintenance charger than it is to just re-index the windows? Not to mention, I'm not so sure I'd want to connect the charger with no battery load in the first place

Exactly right jerryu, 
the charging device goes to recharge directly to the battery which in turn powers the car's electrical circuits. Removal of battery==nothing to power those circuits.

The real question is do you lose anything in the DIC (MPG Numbers, Total RPM, etc). I know this thread is 4 years old but I need to replace my battery soon and was looking for answers...

I didnt lose anything (including DIC) when I did mine. When you pick up your new battery you should consider getting a post strap. Makes getting the OEM out much easier.
