I haven't driven or even taken a ride as a passenger in a C7 convertible but it was always Targa top for me. In my opinion the Targa top can give some of the feel/advantages of a convertible but also can provide the feel of a coupe. So you have flexibility depending on the weather, mood you're in, etc. Targa top also costs less if that's a factor for you.
You should probably experience a C7 convertible before making a claim like the above as I have driven both and the convertible is a TOTALLY Different driving experience than the Targa in regard to feel, noise and wind level.
There's so much miss-information floating around about C7 convertibles by those who have never experienced one, just like the myth regarding no storage space.
In addition to liking the open cockpit feeling, I personally like the looks/lines of the C7 convertible better than the coup. I also feel the "waterfall" enhances the interior over the hatch-back look of the coup. Of course that's just personal preference and not saying one is better than the other. My convertible is surprisingly quite top up or down, which is definitely not the case in the much earlier roadsters or C7 coups. Also, there's a lot more storage space in the vert truck than most believe. That's a 40 liter duffel bag and a standard size airline carry-on roller in the truck photo below with space left over. Even quite a bit of additional space behind the partition that can be utilized while top is up.
All in all, you can't go wrong either way, just depends on whether you're a vert person or not.

I’ve always wanted a targa top car. I loved the Ferrari 348 and 355 targas, old Supra targas, and the Porsche targas. They started going out of style as more hard top convertibles showed up. But convertibles often look awkward to me with the top up. I personally love my targa, and while not the super convenience of a powered roof, it literally takes under 30 seconds to throw the top on or take it off on my targa top.
I might get flamed but I say go with the coup, sports cars to me shouldn't be convertable. Plus if you want you can always take the targa top off. I never priced a vert but I assume they're more expensive and heavier if I had to guess. All in all, you can't go wrong with either one though.

I went from a 2010 Camaro convertible to a 2006 c6 convertible to a 2014 c7 targa, convertible are awesome in the summer, interior is constantly dusty, I went coupe for a change, having the targa top off is almost like a convertible a little bit, I like the lines of the coupe, take your time test drive both , Dealer let me take the c7 home overnight, all my purchases were lightly used.
There's nothing like a convertible; the targa top doesn't really come close in experience. This is especially true at night, where moonlight and starlight on back roads really make for a great driving experience. Turn the dash lights lower and there's nothing around you but the night sky, framed by the windshield header.
Just don't forget the sunblock (knees too, if you wear shorts in the car). A good wide-brimmed hat is a good addition too, lest you start seeing the dermatologist on a annual basis (first-hand experience here.)
All that said, since my wife let me keep my "little" 140hp convertible, I opted for a coupe. I also thought that I'd feel a bit more secure in a roofed 460hp car.
You going to take long trips? Luggage space a consideration? Coupe offers greater ease with luggage and cargo: I commonly travel with a couple of cases of wine, a Yeti cooler, and a couple of bags. There's always space left over.... coupe for me:
If you're old and lazy, get a convertible. If you get the coupe with the removable targa you get almost the same feeling as a vert, you just have to take the top on and off yourself. With a convertible you will have wind noise and with the targa you will have creaking. I went with the coupe because I like the looks of them more than a convertible.

Either model will be a great choice and a blast to drive. I personally prefer the coupe over the vert as I like the extra storage space, the flow of the body lines and if I want an open air experience, I can take the targa top off. Tough decision you have - test drive samples of each and see which one pushes all your buttons.
I have owned/own C1 vert, C3 vert, C5 vert and loved them, I have always been a convertible guy - however when I saw the C7 Coupe the body lines were stunning and I was converted...
I would never have bought a C7. that wasn't a convertible. Way, way too many reasons to buy the convertible, and to steer clear of the hatchbacks.
..My 1st Corvette was a brand new 1977 C3 L82. The T-tops were miserable to deal with and storing even a silly roof panel is a complete PITA. The wind above 40mph will beat you to death in the hatchback. The noisy hatchbacks are miserable to live with. ..None of the bad - all of the good with a convertible. At least that's my experience with my new C7, convertible.
Since you don't list where you are from we don't know what your weather situation is. The convertible is real nice, the coupe is real nice. Make a decision.
A lot of misinformation from those who have never driven the C7 Convertible. Driving the coupe with the top off is not the same or even close to the driving the convertible with the top down. The wind buffeting is less in the convertible with the top down than the coupe with the roof removed.
There is plenty of storage space in the convertible. Operation of the top just hold the switch up to 28 mph and you can raise or lower the top no latches to fool with.
The only reasons I can think of to get a coupe is if you do certain types of racing, or you like the look versus the convertible.
