You need to go to your settings on your phone then go to your apps. Find Android Auto and open it. Go to storage and clear the Cache and storage data. Once this is done you should also select the Force Stop option. Go back into Android Auto and it should be asking you to allow permissions, this is normal as you have cleared your memory and Android auto is acting like its the first time you've ever started it. Once your done setting it up, click on settings and you should see the option for "Try new Android auto" at the very top.

I was able to follow both of your instructions, but unfortunately the "Try new Android Auto" is still not an option within the Settings menu.
Not sure what AA version 4.5.59 is, I've never seen an AA version number like that. The one I'm using says:
That's version 4.5.592854-release. If you don't have that you can download on from ApkMirror - just google "apkmirror android auto" or, if the mods don't delete the link again, here.
Once you side load it (and don't worry, apkmirror can be trusted) you'll have the correct version. Clear the cache and storage (google it or click here), force stop any running AA process, restart it and you should be able to see the "Try the new Android" in settings.

It will will only start in the car, if I start the app on the phone.
Even then, it tends to lock up and stop working.

Google Maps runs perfectly.
No issues with WAZE in ether of my cars, loads from the AA icon on the vehicle screen.
Did you have to do anything special, or just plug in the phone and Accept everything?
That's all you have to do. And you should only have to do it once.
And as far as AA and the built-in car apps, they will work fine together. If you're in AA, just hit the home button on the infotainment system, launch whatever built-in function you want to use (radio, XM, music from a thuymb drive, WSJ app, whatever) The internal app will start, then just hit the AA icon to be back where you were in aa. if you were running Waze or Maps, it will just go back to where you were, having continued to run the phone app in the background.
Then change the main display to Audio and you will have audio info in the center display and heads-up display, and the steering wheel controls will apply to whatever audio app is running.
