Are there different types strengths of 3M double sided tape? I am going to install a pair of side skirts that attach with the factory bolts both front and back, but I want to use double sided tape in between so I don't have drill any holes. Is there a particular double sided tape that I should use?
This is what I used to do the same. It'll work fine. Also used it to attach my rear spoiler. A tip: clean both sides with alcohol and use adhesion promoter.
You are going to have a gap. The thickness of the tape where it attaches to the body. It will trap dirt and small rocks. Mount it with rivets that came with it.

I agree. I had the same reservation when I put side skirts on my '14, but after drilling the first hole for a rivet, there was no turning back. And the side skirts are rock solid on the car with the rivets. If something ever happened, I'd probably put a set of side skirts back on the car as I love the look.
If you insist on using 3m tape,get their adhesion promoter wipes. Increases the holding power substantially. Used it on my C6 rear spoiler. The part can be removed and no maring of the paint...
The license mounting plate for our CB antenna was obscuring part of our rear view camera, so I cut about 3" off the left hand side and moved the plate to the left. That left only one license plate screw hold the weight and flexing (air drag) of the antenna to the bumper, so I used several inches of the 3M tape to hold the right side of the plate. Two years, 25k miles, and lots of 100'+ days, still firmly attached.
I also used the 3M tape to hold a pair of laser jammers on the front bumper of our C5, they were still secure after several years and a lot of miles in hot weather
Screws/bolts/rivits are better, but the 3M extra strength tape holds pretty well.

3M VHB is the best; most heavy duty. I have been using it for awhile now for spoilers, etc. Incredible when coupled with the screws!
100% agree. 3M VHB is super strong. Used it on my old C5 to hold a wing on and 6 years later it’s still rock solid.
On my C7, I’m using it along the whole skirt with the front and rear oem bolts and it’s rock solid with no issues. Been on for 2 years at 700 hp and no issues.
I once removed the door body side moldings on my c5. They were held on with double faced tape. It was an all day job. Auto makers use tape for many add ons to cars these days. If prepped correctly, you'll never have a problem using tape. The bond gets stronger over time. Using rivets is fine, and more work, but rest assured you'll never have a problem using tape...
