Guys! Cool your jets! A CEL is not a big deal at all unless it is FLASHING. It wasn't. Read your manual. I get frustrated with ALL NEW TECHNOLOGY which baffles many of my fellow 70 year olds, but new cars are SO FAR SUPERIOR in every way to cars even ten years old that it is not even comparable. We have a ten year old Jetta with 200,000 miles on it...and a new 19 Jetta with 30K trouble free miles. The new Jetta has a LOT more (reliable) features than our 19 2LT. AND the new VW gets 45 mpg on regular fuel!
As for the subscription hassle? Just say no.
I rest my case.
Well, as a quick side note: Saying no isn't always so easy if someone else says yes for you.
I have 3 active OnStar services on three GM vehicles. One of them is 17 years old. Have had an active OnStar account on it for all 17 years. I have the minimal Protection Package which provides crash response and road side emergency services if your car breaks down. I have been happy with them. I have not run into any shady business practices like Sirius XM used to pull right after Siriius bought out XM.
As for the OP I really don't understand why you called to get an appointment when the CEL was on. I would have driven to the dealership, walked in and said I had a problem and let them see about handling my car then. Never use a phone call to do what requires a face to face discussion. And you aren't that busy that you can't take the time. If you are that busy that means like any other busy person you can always find the time required to get something done. The old rule applies, if you want something done then you ask a busy person to do it.
On star is ****. I have purchased 10 new GM products since 2010. Never even used on star before it expired. And your supposed to get 30 minutes for phone calls complimentary and was never able to use 1 minute as they too had expired.
An awful lots of key strokes on this issue. I have had OnStar on my Corvettes as well as other GM products since 2005 and have never had an issue. I have “suspended” coverage during storage, discontinued coverage, and reconnected seamlessly since that time.
All though I have receive monthly status updates on the condition of the vehicle, not once have any of the communications tried to sell me some additional type of service.
Perhaps your CEL was triggered by a non satisfactorily sealed gas cap or other transient variant and was “cleared” by subsequent start up cycles. Hard to know for sure unless you have the code pulled (it should be contained in memory) by AZ or dealer. The fact the CEL was not flashing and it hasn’t reoccurred probably means it was much do about something other than O/S.
The people that want OnStar services and feel like they are a good value should have it. The OP could have gone to any GM dealer when he experienced the CEL and had the problem checked. I agree that making phone calls is not the best way. The car had what, fifteen miles? People that have had problems with OnStar can go to just one Consumer Affairs website listed below for example and read the first 349 customer reviews about OnStar. Like any big corporation there is good and bad. I stay away from them based on my personal experience not someone else's.

Don't think it was an improperly sealed gas cap. OP said he took delivery of a new Stingray; no gas cap.
