I had mine done at the 5 year point even though I only had around 3500 miles on it. Wasn’t expensive and now good to go for another 5 years (no way I will hit the mileage threshold).
I am a chemical engineer who worked in the automotive antifreeze industry. Most of the corrosion inhibitors are non-depleting, meaning they THEORETICALLY last forever. The base material, ethylene glycol will very slowly break down, but what it breaks down into (glycolates in miniscule amounts) will not hurt the engine at all. In fact, don't even worry about the ethylene glycol, only the corrosion inhibitors. However, that said, I would change out the antifreeze depending on how you use the car. If you track it or drive it hard, I would recommend every two years or 25,000 miles. If you casually drive, you can go much further. I have a 2014 Z51 with about 23,000 miles and I probably won't change the A/F for another year or so. As for the GM recommendation, use that as a basis but also figure in how you use the vehicle.
