I've read about people complaining about C7 accelleration hesitation and I assumed that is what I was noticing when passing cars or accellerationg hard out of a turn that I entered pretty hot. Yesterday I realized that it might be the stability control kicking in and out. It seems abrupt at times especially when I am driving it hard (by my standards) which is more often now that I am becoming more comfortable with the car. I think I have noticed it stepping on it hard from a near stop.
I hadn't noticed this on previous cars like my Audi A6 twin turbo (AWD) or my Mitsubishi 3000GT VR4 (AWD) but that was long ago and the Corvette is much higher performance.
I noticed this too the other day. I was abruptly accelerating and the transmission felt like it was "floating" and the car didn't go go faster but sortof froze in speed. Whatever that was it sucked.

My A6 shows some hesitation when accelerating, especially from a stop. It’s not unmanageable, just annoying. No problems when using the paddle shifters though.
