Upgrade time??
I will try to give the pro's and con's you have to deal with.
You have a nice car now. You can keep as is. As said before, you know what you have. Any mod's will gain nothing on future sale or trade-in.
That itch is there!
A 2019 Z06 would be a good choice. Last year, last C7 Z06, insane HP, a real special car, and will always have good resale value. If this is your choice, get a one-owner, a 2LZ or 3LZ, A8 or M7, and stretch for under 15k miles.
A C8 gets you the latest technology, a new warranty, better ride and handling. More wow-factor for some, less for others. A C8 is going to cost more for maintenance and repairs. Consider the added 5yr warrranty for $2800, so a total on 8 year warranty. For now resale is great but that will change quickly, probably depreciate a great deal in 3 to 4 years.
I have the same itch. I am thinking of ordering a 2024 C8 HTC, 2LT, non-Z51, and it MUST have a high wing.
Present:
2017 Grand Sport, 3LT, loaded
Possible 2024 Q3/Q4:
C8, HTC, High-Wing, Red interior

Don't change cars until you can definitively say "I want this car". That includes knowing the exact spec that you want (color, model, options) and then going and getting it.
Otherwise you're just fishing for the next thing, will probably never be fully happy, and will end up asking this forum (or another) what your next move should be
- Your C7 is a beauty
- With the C8, I suspect you would miss your M7. I know I would.
- A little $$$ on upgrades that you like (wheels, whatever) would cost far less
