I will be looking at a 2019 Watkins Glen Grey, 7m 1lt Corvette this weekend. Has 27,xxx miles, certified, comes with 12 month, 12k mile bumper to bumper warranty. I am currently driving a 2011 6m Grand Sport and I don't know too much about C7's.
Any tips or insight on what to look out for would be greatly appreciated.
Single biggest issue I'm aware of with C7 is that the factory Cast wheels tend to crack on the GS / Z06 / ZR1 (widebody) cars. Those cars came with wider wheels and VERY low profile run flat rubber - and literally thousands of people have experienced problems with wheels/tires losing air pressure due to a crack. Only "fix" is to go with a replacement wheel (preferably forged).
There's no problems per se but I'd think carefully about "must haves". All things considered, a 1LT is pretty sparse when it comes to standard equipment. In fact if your GS is a 2LT or above, it'll be better equipped. You'll need to decide if things like heated seats, HUD, etc are deal breakers or not.
I have a 2019 GS Watkins Glen Gray. It's a beautiful color that adds to the C7's aggressive appearance.

I have 34k mile on my 19 Stingray 7M and no problems whatsoever. You are going to love it. If you feel like it is a little soft in the suspension good news is that installing Z51 shocks is pretty inexpensive.

HUD is distracting, C7 cooled seats from what I heard suck. I never use heated seats in FL.
Must haves I would instead get the Z51 package. Better oil cooling, better brakes, sways bars, better suspension.
My base is fine for my DD. Less to go wrong, less to maintain.
Any C7 is a great choice.
I've found the reliablity, build quality, and general Corvette ownership experience to be about the same.
The C7 is a bit quieter, smoother, and more refinded than the C6. In my opinion, the LS engines in the C6 are a bit louder & more raw feeling than the LT engines in the C7. You also feel a bit more isolated in the C7, both in suspension / steering feel, and in the interior sound level. The rawness of the C6 is something that I do miss.

The only things that I found are too cost prohibitive were: HUD and front camera. I still have the base seats because I fit into them better...

Can you give us details on how you added those options? Adding Mag Ride after the car is built is virtually impossible at any reasonable price. A proper combination of normal springs/sways/shocks that are tailored to your conditions and preferences can be quite satisfactory, but not exactly the same.
Some of your other "options" were not available at all from the factory, so there must be some interesting work you did.
