So here is my two cents
I drag race, so for me a cooler stat in addition to a change when the fans come on helps me maintain coolant temp around 180 as I do my burn out. Over the years I have found the oil temp & coolant temp between 180 - 190 degrees yield the fastest elasped times & MPH on my N/A 05 Corvette.
Driving around on the street you would be better served to invest in a cold air intake to lower the IAT temps so that least amount of timing is pulled .......
