Also, on the stiffer suspension for lowered cars, would running in track mode all the time solve this problem?
For a rear 325/25-20 on a C7, it's either 85mm wheel offset or else stick it out. (Inner clearance can include the wheel touching the suspension at full droop and can include tire contact with the plastic fender liner.) But to stick it out, that calls for a very stiff unlowered suspension.

Track mode is just stiffer shocks. That just reduces the number of tire scrapes on a bump.

Take a look at the Pilot Sport Cup 2 in 315/30-19. That goes on a 19 x 11 79mm rear wheel.

My idea for a stick-it-out setup is the 315/30-18 Rival S on the front at 43mm to 46mm wheel offset and the 335/30-18 Rival S on the back at 60mm to 65mm offset. The spring rates must be 650/800 and the car must not be lowered

A 325 on anything less than 90+ is going to rub unless you are jacked up 4x4 and a big rear sway bar. BTDT.

I had contemplated the PSC2, but was advised against it for street driving because it doesn't grip very well unless it's warmed up good with a burnout or really aggressive driving. Hence why I was trying to stick with PSS but they don't make that in a 315r20. Would prefer to keep with a 19/20 set up instead of going 19/19. Wheel/tire set up is infinitely more complicated than I thought it was.

I had trouble with AD 08's warming up slow in autocross but on the street they stayed warm.

For autocross, the Rival S is the tire.

Most likely, the Pilot Sport Cup 2 just lose sharpness at 4000 to 6000 miles

Alright then. Part of the problem is I live in a very isolated city in Canada haha. It's 500+ kms one way to the nearest track. I go there about 4 times a year, but the highway driving and primarily street use lead me away from PSC2's and R888's. That's why I was trying to keep the MPSS but apparently 325 is too wide without rubbing, 305 is too skinny for me, and they don't make a 315 in that size.
