What oil temp is considered overheating? I have a 2015 C7 Z06 and even when driving at night at cool sub 60* temperatures, the oil temp can get up around 190-200 or more. Is the something I should be concerned about? Any feedback is appreciated.

These cars have plenty of capacity to keep cool at the street; I don't think you could ever overheat it no matter what at the street, unless there's a problem with the car.
Once coolant is above 240 degrees F, and oil above 280, you are in the very-hot territory. I believe the car gets into limp mode at 260 degrees F coolant, and 325 degrees F oil (others, please correct me if I'm wrong). People can usually get close to these temps only at the road course track.

I have a 174 tstat, larger heat exchanger and radiator, and 2.3 upper pulley, and at low 60F ambient my oil temps are around 170-180 on the hwy in 7th and get up to 200 after a few 2-3-4 WOT pulls. So if you're all stock, those temps you're seeing are exactly where I would expect them to be and are nowhere near overheating, so you're all good.

On the highway in 70/80 degree ambient temps driving at 70 mph in 7th gear I will see a coolant temp that varies from 190 to 194 and an oil temp that varies from 180 to 190. On track I see coolant temps in the mid 220s and oil temps in the mid 270s. I don't worry about any of those temps.
