Was going to have the tires replaced by taking the rims off the car and delivering them to the tire place (going to do some other work while the car is on stands). Would like to replace the TPMS sensors since they are getting a bit old and, well, this would be a good time to do it. Planning on using OE GM sensors. BUT... if I swap out all the sensors, then bolt the wheels back on, is there any kind of "resetting" or "relearning" that has to be done so the car can detect the new sensors and would that require a trip back to the tire shop for them to use some kind of electronic tool to do so or can I just bolt on and go and the TPMS system sorts itself out?

The car will learn on it's own, usually within 5-10 miles of driving.
I got wheels, tires, and sensors from Tire Rack for my 19. Installed them and never have seen any problems at all. Both sets of tires/wheels work perfectly and they get swapped twice per month to run autocrosses..
It won't necessarily learn the new TPMS on it's own. Mine seemed like they were reading after install but they weren't. I then did the relearn procedure which is in the owner's manual and about 20 miles later the TPMS all went blank, reading "--" for pressure on all four. Yes, I used GM TPMS sensors. I ended up having to run by the dealership and they used the relearn tool to get them synced up. No issues after that. May be worth checking with your installer to see if they have the hand held relearn tool. If not, you can always run by the GM dealer, they can do it in 5 minutes. It isn't hard, just need the tool.

I used the SCHRADER 20223 Sensors that I bought on RockAuto. They are preprogrammed. I think they are the exact same as the GM sensors. I have 2 sets of wheels and tires. One set has the OEM sensors, of course. I put the SCHRADER sensors in a set of all-season tires on Black Grand Sport wheels. My car sat overnight before I drove it and the sensors all read and worked perfectly as I backed out of the garage. SCHRADER 20223 sensors were right at $105 for all 4 shipped to me. A lot less than the local dealer wanted. The "big name" tire store wanted $65 a piece for some universal sensors!!!!!
