So I’m at a stop sign in my C7, just minding our own business/waiting for our chance to go, when the engine starts revving rather scarily, climbing all the way to or near 6K; not sure what to do, but after a few seconds of panic I shoved it into neutral and may have just tapped the gas pedal - in any case it calmed back down to normal idle revs, although it also temporarily sent the oil temp gauge to 205+, and left a lingering smell of singed oil. Ran fine after that for the remaining hour or so of the drive. Anyway, to my questions - what might cause this? Might something I did have been to blame? Anything I could’ve/ should’ve done to arrest the rev spike quickly & safely?
No, it hasn’t been tuned, just regular maintenance; as far as I’m aware (bought it used, and I’m no wrench), it’s entirely stock, the maintenance records/history and what I think I know of the previous owner make an add- on like a Pedal Commander unlikely.

Your throttle position sensor is going bad. It sneaks up on you and your car wants to take off when your foot is on the brake. Be careful get it checked out by a dealer because it can cause you to have an accident, blown engine Etc.

Not sure if that is it , the gas pedal signal , the throttle sensor signal , the airflow sensor and the RPM all have to stay within spec or the ECM will instantly go into reduced power mode and pop a CEL .....
