My 2023 Corvette Just Started By Itself in Garage. Please Help!
My 2023 C8 just started automatically in the garage, ran for 5-10 minutes, and shut itself off. The key fob is in the house and my Chevy app hasn't been activated with OnStar. No one was near the fob. What could be the issue? Does anyone know if it could be the starter solenoid and if so will it throw a code?

Obviously your C8 was just letting you know it was tired of sitting and wanted to go for a drive.

That has happened to me with a fob in a pocket, when I was bending down in a way that the button was being depressed and held. You don't mention where in the house your fob was, but if it was on a countertop, someone could have set something on top of it, or inside a purse being jostled around.
The shutdown you described would have been normal if you didn't enter the car during that period.

I'm at a loss for the explanation. Where is the 2nd fob?

All I can say is monitor the car. Unfortunately, without a code or the ability to replicate the problem, a dealership won't be able to do anything.
Hopefully, you have no hacker types who have spied your C8, but you might consider a "Faraday cage" box for storing your fobs. There are plenty of choices at Amazon.
If your fob is on a countertop in range of a scanner in the street, that might have picked up the fob signal. Move it as far away from the street as you can.

~10 minutes is the idle run time before it shuts off by itself.
Question is, why did it start in the first place.... I mean it is just software so there are bugs, and dare I say it *hackers*
Maybe call the Chevy Dealer and ask them if they have heard of this?

Would be car thieves are a possibility, but they shouldn't be able to drive off without the fob. It could also be as simple as kids playing hacker games.
A simple solution is to store the fob in a location where no signal can be picked up. Faraday boxes are cheap and readily available.

No big surprise there. It would be a rare event.
Move your fobs as far away from a street as possible, and consider ordering the item in the link below.

My odds of this are reduced, the town I live in doesn't have a stop light, gas station, or convenience store. As long as the ground hogs and deer don't start hacking me.

Yes, but OP stated the MyChevy app was never set up.
Even when started that way, the fob must be present in the car to drive it away, and it shuts down after 10 minutes if that doesn't happen. That fits with the event described in the OP.

But doesn't necessarily mean the source was the fob either....Could also have been an error start signal sent from Onstar...

Have you spent any amount of time around pre- or teenage kids these days? It's amazing the kind of DIY havoc they can find on the internet.
A single video posted on YouTube a couple of years ago started a nationwide wave of certain pre-2022 Hyundai and Kia model thefts that continues today with both scrambling to come up with a retrofit solution.
My suggestion was isolating the fobs, and monitoring the situation, which OP has apparently taken steps to do. If it was an errant OnStar signal, it will almost certainly never happen again.
Unless I'm wrong, I don't think OnStar will start a car for a customer, but they can unlock it, or they can disable it, with an official law enforcement request.
