Given the market, I'd say just wait and find out if you like it or not. If you don't, flip the car and order another one. Not the end of the world. Might just pay for a z06 upgrade.
In the past, 3000 was a pretty solid cutoff. For the C8, with very long times between orders going 3000 and their actual TPW, there have been a number of changes allowed at 3000. However, it seems that 2022 is being setup such that there won't be these extremely long times between 3000 and the TPW date. So, 3000 may again become a hard cutoff for order changes. Worth a try to push your dealer to push Chevy to allow the change. But don't wait, do it tomorrow.

It actually has to do with the fact that there were no June allocations, the July allocations were much smaller than previous months and the factory has not had to shutdown due to supply chain issues recently. So, the backlog is significantly lower than it has been for quite some time.

Yes KW coilovers at least from V3 and up are a great product for track and street. It's not as simple as MSRC though where you just press a button in the car. Adjustable coilovers are completely mechanical, you adjust the height, compression, and dampening by physically twisting the dial on the coilovers by hand or with the wrench. Usually the car needs to be jacked up and sometimes the wheel needs to be off to adjust. If you know what you are doing, the car will be extremely dialed in and then you can do a more aggressive setup on the track if you want. KW will have a recommended setting that will suit both needs. Typically V3 are the mostly street, some track coilovers and clubsport if more track oriented.
I'm coming from the BMW scene and they are very popular with the enthusiast M owners. But for the aforementioned reasons they take a lot of effort from the owner. Definitely do some research to see if that's what you want... I would just try to do whatever possible to get MSRC added to the order. Though if you go with KWs may be able to sell the Z51 suspension to someone with a base car to recoup some costs.
The thing is, if you drive it for year while waiting for a 22/23, you still might be able to flip the non-mag car for a profit (or at least break even). If you end up feeling that the non-mag is acceptable, you have months to cancel your new order.

You don't understand the order cycle. Yes, an order sitting at 1100 can be changed at any time and as many times as you want. Once your order is assigned to an allocation and moves to 3000, changing the order becomes much more difficult - some changes have been allowed with the very long times between 3000 and the target production week (TPW) that we have seen with the C8. The OP is already at 3000.

Did you actually read the OP's post? It states his order is at 3000. All July orders that were matched to an allocation went to 3000 yesterday. I've been dealing with GM's order system for well over 20 years.
I think the initial impression is the MSRC comes standard in the Z51 package. I opted for non Z51 and spent the savings on mag ride, exhaust and front lift.
You can see posts here from someone that had a car at 3000 with Kerbeck and he was able to get it changed and it bumped him to a much further out TPW. It *is* possible, but I think once you hit 3500, not possible at all.
