I'm like you - had not driven hardly at all at night. You'll notice a pretty obnoxious reflection off the bottom of the frame of the rearview mirror as well as refection of the surround around the infotainment screen. I'll electric tape it if I have too....

The light does serve a useful purpose and has been in Corvettes since at least the C5.
I edited my previous post. If the OP is bothered by the light, I’d suggest trying to see if putting the car in night mode will deactivate the light (since it is an interior light) per instructions on page 108 of the manual.
Ive driven at night here and there but I never noticed that light.

Most people don’t notice it. It just subtly illuminates the shifter switches and it would have to be fairly dark and/or you are really looking in that area (now that you know what it is and where it is) to notice it.
No offense to the OP, but I’m at something of a loss to understand how such an innocuous light is bothersome. Most people (myself included) don’t even realize that such a light has been in Corvettes since at least the C5.

What useful purpose is that? The shifter switches are lit (unless you turn on night mode), so you don't need an external light to see and use them.
Night mode isn't really suitable for most driving situations. You lose all visibility into the controls on the steering wheel, the HVAC controls, and the door buttons, making it pretty hard to use any of those at night.
The light doesn't bother me either, but it's not for you or I to decide what should or does bother the OP.
If the OP will be satisfied with making it dimmer, he might consider this:

To each his own, but I’ve always found the light to be a nice added touch. Might not be as necessary as it might have been in other Corvette generations, but I think illuminating the shifter switches is useful.
That said, I merely suggested the OP try night mode to see if it turns the light off. I’m pretty sure it can’t be turned off any other way.
The product you recommend should work for him, but I still find it interesting that a light that most people don’t even realize is there is so bothersome, but I am not the OP.

I have had C5s and now a C7 and never had that accent light bother me when driving at night. I guess to some it could be a distraction though.

Yep the OnStar Blue Light and the Red Light were a real distraction as I instinctively scan ALL mirrors ALL the time. Those small Blue and Red lights made me think they were on top of a car behind!
I used a hole punch and black electrical tape. Solved the issue.
I attribute some of my not having an accident with another car in 63 years driving of knowing where all cars are around me at all times. In fact when the 1990 SAE Tech article on defensive driving came out, that defined how to adjust your side mirrors, it also spent a page on the most critical cars to watch are those coming up fast behind who will soon be in your blind spots. That takes following them instinctively by always subconsciously scanning your center rear mirror. Then following them as they are picked up in the side door mirrors. BUT that takes a clear wide rear view, which with a C8 coupe you only get with the TV mirror.
Then thought I have been doing that from when I started driving 30 years before their article. WHY? There was no radar at the time and driving my '41 Coupe with an Olds engine it as the only way to avoid tickets! So was always looking for anyone coming up fast from behind. Was either a cop and someone crazy so slowed down!
Maybe it's the height at which I sit causing the reflection, maybe it's my expectations for the amount of light I want at night but it's not necessary in my mind given the shifter switches are illuminated and it bothers me when on....
I might buy a sheet or two of these. If I get up in the middle of the night I feel like I can walk around the house and all the lights are on between the alarm clocks, lighted extension cords, audio equipment, cable system, lighted outlets, appliance lights, and on and on...
