Modern paints are fully cured after the painting process. There is no reason to wait to polish, especially if the car takes 3+ weeks to be delivered after its finished. Plenty of people have their cars paint corrected and wrapped before driving them.
How long does it take for the paint/clearcoat to cure before one can safely polish?
You can cut (sand) and buff a repaint with in 2 days after repaint is completed. Can be polished but not sealed right away. Let a repaint bake in the sun 2 weeks and you can do anything you want with it.
Having sold equipment to the automotive industry around the world, in the body shop, paint shop as well as trim, I can tell you that the paint goes through an oven and is cured. When it comes out, it all set to go. It’s been like that for more than 30 years....probably longer.

I had my bumper resprayed - were they wrong to wait 30 days b4 installing PPF film? TIA.

Different situation - your bumper was not run through an oven like the body panels are at the factory. The cure time for a repaint is longer as even if they use a shop "oven" it's still not what can be achieved at the factory in terms of temperature unless you want your interior to melt
