I can't speak to Girodisc on the C8, but they are a quality brand with good reputation. I'll personally be going with the drilled, slotted, & coated Powerstop rotors on my Z51 foe the reasons you mentioned.

Girodisc uses a 2-piece design with less rotational mass (aluminum hat with cast iron rotor). Powerstop is a 1-piece cast iron design similar to stock. The Girodisc is the superior rotor and costs accordingly; with mainly street use I can't justify the extra cost on my car.
I already ordered the ceramic pads & am trying to reduce both brake dust & rust.
We have used them on several C8's so far as well as many other platforms we work on!
They fit great, look great, perform great, and are at a great price point! The ability to just buy replacement rotor rings going forward is a plus too!!
I use giro disc rotors on all of my performance vehicles as well ( C6 Corvette, Mitsubishi Evo)

What pads do you recommend pairing with these for the track and for the street?
If you have to have a one size fits all I woud suggest
-OEM (Made by Pagid, solid but hella dusty)
-Ferodo DS2500 - very similar and a popular compound for years for dual use
-Girodisc GP10 - these may lean a bit more to track use.
