Do you have to use this every time you use Z2/Z5?

No, only the first time, if you are applying multiple coats at once and every 6 months to a year.

I do, but that's mostly because I don't have the time to wait for it to cure completely without it. You certainly don't HAVE to use it every time.

You will get a harder, brighter finish using ZFX, but as said you do not have to use it every time.
