The lower the better.
My car runs well with coolant around 179, tranny around 180 and not sure the oil but I am sure it is under 200 as well.

Well I know its supposed to warm up before you stomp it. So what temps should I wait for before smashing the gas?

Normal operating temp. I would not mash with any temp under 120.

I've had the best luck with my coolant temps in the 150 range before my burnout, about 165 or so after burnout.
Oil temp about the same range.
