So what happens if you want to quote a part, answer that, then quote another part and answer that. How's it done? I've seen it but have had no success in doing it. Or quote two posts together?

Quoting one post is easy, but quoting multiple people from multiple posts then starts to become a manual process.
You may cut and paste passages into notepad from each post and then manually put the [ quote] and [ /quote] tags around for example, then put them all into one post.
