Lot of good recommendations already from some of the great members in the C3 section. Plan ahead, buy parts when you find a great price, and especially as doorgunner said, take pictures, take pictures, take pictures! With all the current cell phones around these days, even taking videos while you disassemble components will be very useful at reassembly time.
Keep a box of different size baggies around, as well as peel and stick labels and writing pens, to keep all the miscellaneous parts together and tagged. (I have had better luck with labels than markers on the baggies).
Agree with your plan to not be focused on a numbers matching NCRS car. This will give you some latitude when finding bargains (although quality) replacement parts.
