They are going through the roof for the same reason 60's muscle did. The people that wanted them back them now have the means to buy one. Heck, even my 15 year old kid knows what a Fox body is (and wants one). I'm still kicking myself for selling my notch at the bottom of the market. And my LX. And my GT. Damn kids and women ruin everything.

I paid $2000 for mine in 2005. It wasn't mint, but in pretty good shape. Put about $1000 into it, drove it for two years and sold it for $4000.

It was my neighbors car, he always liked my other foxes and three years ago I was backing out of my driveway when he said he bought a 56 Chevy and needed the garage space. He told me he wanted it to go to someone who would care for it and didn't think his kids would, $1100 later it was mine.
