What distance will you be shooting at? Tele lenses can get big and heavy! How “quality” do you want the photos? What lighting conditions? You may be surprised that your budget MAY not get you the results you want in the field. The car show will be cake no matter what you get.
if you gonna be backpacking the camera in you may want to consider a micro 4/3 smaller lighter and can still produce with a good quality lens
Doing a little more reading. Smaller is definitely better as far as packing the camera in. I'm already carrying a lot.

probably not. you are going to need some zoom but 100 yards for a full sized deer can be taken with a 200mm (possibly less) with good results. your biggest problem is going to be lighting and the darkness of being in the tree line. most "kit" lenses are going to have a high f stop and need a good amount of light.
the camera above might be a good starting point to get your feet wet but there is a learning curve to it.
I agree with Drew above and since you have some familiarity with Canon, another plus. Is what you posted in your first post all in for $300 ? if so seems more than reasonable to me
