Which track day tires for stock stingray wheels?
Tire wise I ran Nankang CRS last year and was VERY happy with them. I'm going to give the new Bridgestone RE71-RZ a shot.

For stock Stingray wheels, I’d probably look at:
- Yokohama A052 if you want max grip
- RE-71RS for a little better durability
- Falken RT660 if you want a cheaper track-day consumable
Honestly, anything will be better than those all-seasons on track. The car deserves real rubber before you start pushing it at Sonoma or Thunderhill.
Also worth checking Tire Agent before buying. I was comparing prices there a couple months ago and they actually had better deals on RE-71RS sets than Tire Rack at the time, plus shipping was faster for me.

I use their 18" as well as BC Forged's on my Z06 (wheels for widebody; for Z06, requires J56 brakes with e-brake caliper removed, or aftermarket calipers. Z51 should clear with stock brakes).

BC Forged RZ39 18"x10.5" ET50 Front, 18"x12" ET50 Rear
APEX VS-5RS 18"x10" ET42 Front (19.1 lb), 18"x12" ET50 Rear (20.7 lb).
Tires:
Front: 295/30/18, 315/30/18 (on 10.5" wide wheels)
Rear: 345/35/18 or 345/30/19
