I am getting ready to put in some dynamat in my doors. When putting down a new strip, do I over lap the old one? If so, by how much? I was thinking 1/4 in.???

Personally I try and get it to lay as flat as possible. In areas where I am putting down more than one layer it makes it much easier IMO. 1/4" overlap I am sure is fine however.
IMO, overlapping doesn't really matter much. The purpose of dynamat is to increase the mass of a panel so it's less prone to vibration and the butyl compound is a vibration absorbsion material. As long as you get most of the surface, it should be fine.
However, if you want it to look right, my suggestion would be to overlap, then cut away the excess with a razor to make the edges meet perfectly.

Agreed. If I overlap I typically will overlap with a quarter sheet or more. Also, I get nervous about material edges near moving parts in doors or where they could snag. So sometimes I will run material until there is a depression in the metal or until its safely past the "snag point"
