I'm looking to upgrade my stereo, and I have a couple questions about the AVIC N1,N2,N3.
Which ones (if any) will play MP3's burned to DVD? (I hate that my current Alpine will only play them from CD-R)
What is the limit to the total number of track that each can recognize. (My Alpine only sees the first 250. I know this may seem like a lot, but I want more)

Sounds like the answer is "no" and if the N3 can't do it, it's likely the previous generations couldn't either.
My Alpine IVA-W205 can play MP3 DVD's and I believe the single din version IVA-W105 can as well so that may be an option for you. No built-in NAV on that though, outboard dock or drive unit only.
