Nice engine I prefer low end torque over high end horsepower aswell

I did a lot of research before I bought a new manifold. I went with the Holley 300-36 (ironically the tallest) because from what I've researched, it's a cloned 70-72 LT-1 manifold.

(my hood is already destined for an upgrade, so height wasn't the determining factor)

I used the GMPP intake as well, no choice 8 years ago. I sectioned 1.5" out of the air cleaner, used a 4th gen Camaro air filter and a Ford breather element. Seal just touches the hood and the lid has .75" clearance. Good luck with your install.
