Hey doc . . . I'm trying to get mine ordered this week. I'm trying to pick a heat shield right now. I have 0.0 experience with sidepipes (yet), but have heard you or your passenger can get burned on the leg pretty good. The shields helps prevent contact with the pipes directly.
my last ride was a harley roadking with true duals. im starting to get the picture.

I've got Patriots on our '76, they sounded great at first, but the new engine is all over them, they are way too loud. I think the sound deadener has been destroyed, so I was going to get Hooker side pipes, but they don't fit angle plug heads, so I'm told and they are 1-7/8' primaries and 4" collector which for anything smaller than 383 is way too big. Someone surely makes a 1-5/8" or 1-3/4" set with 3-1/2" side pipes. My Patriots are 3" and they have covers which help the look.
I did look at Stahl but their's are more for racing and also too big. If I had access to some old Hookers I would make my own in a smaller size, get the pipes replicated mandrel bent.
One things for sure, I am not going back from them to under pipes.
If you get ceramic coated ones there is a far less chance of leg burn!! i have touched my leg to mine after a ride and moved it quickly realizing the heat but have yet to get a burn/blister!!!
They look and sound great!!! never anything else on my 68!!
Pros:
1. They look bad@$$
2. Maybe a little horsepower gain? (Equal length primaries)
3. Sound awesome no matter what muffler insert you get
4. Almost a Corvette-only thing. Kits exist for other cars, but are seldom seen as much as on a Vette
5. Cooler inside the cabin
Cons:
1. Don't touch them. It hurts
2. Can be a bit pricey

If I end up going w/ a BB on my 71, would these be the right headers to use: Hooker Super Comp for sidepipes (if I have the $ to do it)? If I do the BB, it'll probably be a ZZ454. Thoughts on this combo?

Those you have picked out are just regular headers. You need sidemount headers
There's a quite a few on there with different finishes. I'd suggest either Stainless (no rusting, pitting, discoloration, or replating), or JetHot (ceramic).
You'll also need to buy the sidepipes themselves separately

The big downside is of course the cost. You will probably spend twice as much for the headers and side-pipes as you would for an under-car set up of similar quality.
