Hi d,
Yes, cars with all/most original parts in good condition are VERY rare and generate a tremendous amount of interest when displayed.
Here are just a couple of pictures of a very low (300) mileage 72 that's as original and un-touched as any car I've seen.

That last pic- Hard to believe thats a 72. Must have been stored in a humid controled garage. Thanks for the pic's. Im looking for a 73-77, But I want a L82 4 speed, Which is rare. But Im willing to hold out till the right one comes.

Any decent machine shop can sleeve a cylinder and it is very common and is very cost effective..

Sleeveing has been around for decades and for many many reasons most being for repair and for performance. Sleeving helps increase gain cylinder wall integrity especially in aluminum blocks. Smokey Yunick swore by them for instance, as did NASCAR and Top Fuel Dragsters. Most HD diesel engines come standard from the factory with sleeve cylinder bores.
