I just picked a car that has not been on the road for 20 years, it has some aftermarket wheels on it from the late 70's but I am going to put the stock wheels back on. What modern tire size best fits the stock 8X15 wheels?

welcome PRG1969, I'm glad you picked up a 72 (my favorite year). In 1972 your car came with F70/15 bias ply nylon cord tires, the closest size to that nowadays is a 225/70/15, however, a lot of people here have installed 235's or 245's without any problem some here have also put on 60 series tires(less tall in the sidewall)without any issues.
What color yellow did you get? was it Sunflower yellow (code 912 on the trim tag) or is it War Bonnet Yellow (code 989).
Here is a pic of my '72 with 225's on it.

A newly found 72!!!! Well Done!!!!
As you decide on your tires consider Roy's information well. The size (225, 235, 245, etc) and the series (50, 60, 70) greatly affect the height (diameter) of the tire and thus affect how well the tire fills the wheel wells.
You see some cars with very wide tires, but tires that are too short, and thus make the car look like it's on roller skates.

A '72 Corvette [undamaged] will always accept 235 width tires on 8" wide x 15" rims. Most of the time you can install 245's on it without rubbing. Sometimes, you can install 255's with no rubbing. Pick your 'poison'....
P.S. Why would you need wider than 235's on the front end??
