I am in the process of swapping out frames on my 72. Does anyone know how I would determine the correct amount of shims that need to be placed at each of the body mounts? I would assume that they would be different for each frame due to slight variances in construction. The old frame was so badly rotted that I was unable to keep track of the old shims during tear-down.

I believe St. Louis used a machine to 'measure' the frame and determine the number of shims to be used before the body was dropped in place. I don't think any shims were placed or removed after the drop.
I believe I'd start with 2 shims on each body mount.
Then you can add or subtract as you begin to establish the door and hood alignment and gaps.

Correct.
Can you still see shim markings near the body mounts on your replacement frame? If so, use those.
