I can't see the pics of the 81 either so won't comment on that. I would like to bring something to your attention about 81s though.
Several have mentioned in passing that 81s had a computer controlled carb. The 81 CCC system controlled the carb, distributor advance and torque converter lock up. All of these components have been replaced based on your description. Many on this forum advocate removing the computer anyway (I'm certainly not one of them) but one thing that you need to be aware of is that the "Check engine" light will no longer function properly. Why should you care? Passing smog.
In many states (CA and NY for instance) the fact that the Check Engine light doesn't work is an automatic fail. With all of the components above missing and presumably the smog pump and diverters (they hook into the stock headers) missing too, it would cost a lot of money to make it pass a smog inspection. GA may not require any of these things now, but if you ever wanted to sell it nationally, there are many states where you couldn't transfer the ownership.
Do any of us buy these cars wondering where we would be able to sell them someday down the road? I know that never crossed my mind. Where I live there is no inspection of any sort at all. I will cross the smog bridge if it is ever built, until then I enjoy a car with no emissions stuff on it anywhere, I took it off and have never looked back.

I see what you are saying. We don't require that stuff here in Ga...and actually...I don't plan on selling whichever one I get

Not unless I bought the car to flip it right away otherwise its a waste.
Keep it you will dump money in it....if I liked the car I bought it and drove it never cared about what its resale was.
Get bored easy so will let someone else take on the task of wondering about that stuff.
