What was the difference between the standard interior and the deluxe in 1971? Just the door pannels?
In addition to the angled carpet piece at the bottom of the door panels you also got:
Leather seat covers instead of vinyl
madrid grain sunvisors
cut pile carpeting instead of 80/20 loop
I'm not sure if I'm leaving something out, someone will chime in.

S/S trim on the foot pedals (I think) was deluxe interior only.

I believe the stainless steel trim was applied to all pedals for the model years 70 and 71. It wasn't part of the custom interior.
In the 72 model year I don't think any cars had the ss pedal trim.
