I have an 84 that has been carb converted.
It has a Qjet on a stock intake manifold off a 1978 vette.
The Qjet is 750 cfm (right?)
if I got an edelbrock 2101 that is only rated to 600cfm, what would I lose (notice)? besides the obvious 150cfm.

The Q-Jet IS a 750 CFM carb, the 2101 is probably good enough, and there are lots of fast cars running them. Unless you spend a lot of time out close to WOT I don't think you would notice the difference.
Your Q-Jet has a capacity of providing 750 cfm airflow. But, what it actually flows is totally dependent on how much airflow your specific engine needs. A stock 'base' 350 engine will require something less than 600 cfm at engine redline. In that case, the Q-Jet will only open the secondary airvalve enough to flow 600 cfm. If you install better heads/cam so that the engine will flow 700 cfm, the same Q-Jet will 'self-regulate' to provide that amount of airflow.
Depending on engine conditions, that carb might need changes of jets/rods, but it will work well for any engine requiring 500-750 cfm flow.
