Dean that is the same one that I used and that is from Alan 71 the only thing that I did was shorten the front by 2 feet so I had access to the lower front spoiler area and I added a support to the radiator support holes.
I did a similar modification. I added uprights at core support as well. Works very well and not a lot of money. Takes a morning to cut and screw together. Harbor Freight has the wheels for cheap too. I also made mine 6" taller to help with body work down low. I am sure the wheel size has a lot to do with how high off the ground the body ends up. I would suggest large rubber wheels for easy rolling over concrete joints.

I used lag bolts and sheet rock screw to put it together so I guess you could take it apart. To be honest when I am done with mine I will give it away if not scrap it and keep the casters.

Depending on how your going to want to move the body around once it's on the dolly you might want to consider wheels a bit larger than castors.
When I designed mine I allowed for the fact that the body would be both in a shop with a concrete floor but also outside on packed down soil and grass…..10" wheels from HF.
