I have the engine out of my '69 for a re-ring. I'm looking at all of that space and trying to prioritize projects. Of course, I will clean the firewall and maybe change the power steering hoses. What else would be convenient while the engine is out? Maybe replace headlight vacuum hoses?
I change everything. If it works or not. I change hoses, vacuum lines, brake lines. Original or not. Then everything is mine. And I know it should work.
I would have said firewall right off the bat, but looks like you are going to take advantage of that already. How about taking this opportunity to inspect and refresh the main vac reservoir. That thing will be a million times easier to get out now and patch up any potential leaks.

front suspension bushings, get the radiator flushed and preassure tested. clean and paint the hinges and the hood latches. check the motor mounts for tearing. pressure wash the transmission tunnel and insulate it. clean and paint the driveshaft and replace the u joints. inspect the body mounts, look for any stress cracks in the fender areas. clean the light assemblies.......

Repair that dent in the cross member where Bubba raised the car with a floor jack. Clean and mend every hose and wrapper, sealing with nu-vinyl. Replace the A-arm covers if torn. Inspect the firewall grommets, verifying they are there and secure, then put a bright light in the passenger compartment with the room dark to verify you got it right. Clean and paint the brake fluid reservoir. Restore the hood connection pin assemblies and inspect the hood e release cable. Rebuild the steering linkage and power hydraulics (if applicable).
